How do we produce the Fruits Jam
Hour firm produce food by cultivating, picking, transforming, in preserved jam boxes, under the control of the civilian authority of public health.
Hour farm has 100.000 m² cultivated fruits trees, typical Italian fruits as figs, mandarins, peaces, apricot, quince, orange, prickly pears, prunes, pears.
Respecting the H.A.C.C.P protocol (Hazard Analysis Critical Control Point):The fresh fruit is picked by the tree, washed and cooked, the fruits past obtained is cooked with Sugar 55 %, a little of Pectin ( not necessary in quinces jam). As PH correct we use citric acid and tartaric acid ( not necessary in orange and mandarin jam) closed and sterilized in boxes in united plastic and aluminium.Each box in united plastic and aluminium is airtight, it have to be protected by light and heat, and it has a shelf life of 3 year. Each box when it will be opened has to be preserved at < 0 - > 4° C, and have to be eaten in one week.
